Title: Mock Tomato Sauce
Categories: Lowsalt Sauce
Yield: 4 Servings

12ozTomato paste -- 2-6 oz cans
3cWater
1/4cChopped onion -- finely
  Chopped
1 Clove garlic -- minced
2tbFresh lemon juice
1dsHot pepper sauce
1/4tsBasil
1/8tsBlack pepper -- freshly
  Ground
  Dried thyme -- to taste
  (optional)

In a medium saucepan combine all ingredients and mix well. Place over medium-high heat and bring to a boil. Reduce heat cover and simmer 30 minutes, stirring occasionally. Makes 4 cups. Use in any recipe requiring tomato sauce.

May be stored in a covered container in refrigerator for 1 week. For longer storage, freeze in small quantities for use as needed.
